Ingredients
  

2 cups fresh sweet corn (about 3-4 ears), kernels removed

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

2 tablespoons balsamic glaze

Salt and freshly ground black pepper to taste

1 avocado, diced (optional for extra creaminess)

Instructions
 

Start by preparing the corn. If you're using fresh corn, bring a pot of water to a boil and add the corn. Blanch for 2-3 minutes, then remove and cool under cold running water. Once cool, cut the kernels off the cob and set aside.

    In a large mixing bowl, combine the blanched corn, halved cherry tomatoes, mozzarella balls, and torn basil leaves. If you’re adding avocado, gently fold it in to avoid mashing.

      In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, salt, and black pepper until well combined.

        Drizzle the dressing over the salad and gently toss to coat all ingredients evenly.

          Taste and adjust seasoning if necessary, adding more salt, pepper, or balsamic glaze to suit your preference.

            Let the salad sit for about 10 minutes to allow the flavors to meld together before serving.
