4 boneless, skinless chicken breasts

8 ounces fresh mozzarella cheese, sliced

2 large tomatoes, sliced

1 cup fresh basil leaves

3 tablespoons balsamic vinegar

3 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon dried oregano

1 tablespoon fresh basil, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Pat the chicken breasts dry with a paper towel, and place them on a cutting board.

      To create the Hasselback effect, carefully slice each chicken breast horizontally without cutting all the way through. Make 6-7 cuts on each breast, spacing them about 1 inch apart.

        In a small bowl, mix together the minced garlic, olive oil, balsamic vinegar, dried oregano, salt, and pepper.

          Brush half of the mixture over the chicken breasts, ensuring it seeps into the cuts.

            Stuff each cut in the chicken with a slice of mozzarella cheese, a slice of tomato, and a basil leaf. Continue until all the cuts are filled.

              Drizzle the remaining olive oil mixture over the top of the stuffed chicken breasts.

                Place the stuffed chicken breasts on a baking sheet lined with parchment paper.

                  Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese has melted.

                    Once cooked, remove from the oven and let rest for 5 minutes. Garnish with fresh chopped basil before serving.
