For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup brown sugar

2 (8 oz) packages cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

For the Apple Filling:

2 cups Granny Smith apples, peeled and diced (about 3 medium apples)

2 tablespoons lemon juice

½ teaspoon ground cinnamon

¼ cup brown sugar

For the Crisp Topping:

1 cup old-fashioned oats

½ cup all-purpose flour

⅓ cup brown sugar

½ teaspoon ground cinnamon

⅓ cup unsalted butter, melted

For Serving:

Store-bought caramel sauce

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake for 10 minutes, then remove and set aside to cool slightly.

      Prepare the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and beat until combined. Then add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract. Pour the cheesecake mixture over the cooled crust and spread evenly.

        Prepare the Apple Filling: In another bowl, toss the diced apples with lemon juice, cinnamon, and brown sugar until well coated. Spread the apple mixture evenly on top of the cheesecake layer.

          Prepare the Crisp Topping: In a medium bowl, combine the oats, flour, brown sugar, cinnamon, and melted butter. Mix until crumbly. Sprinkle the crisp topping evenly over the apples.

            Bake: Bake the bars in the preheated oven for 35-40 minutes, or until the crisp topping is golden brown and the cheesecake layer is set. The center might jiggle slightly but will firm as it cools.

              Cool and Cut: Allow the bars to cool in the baking dish for about 30 minutes at room temperature, then refrigerate for at least 2 hours, or until fully set. Once chilled, lift the bars out using the parchment paper and cut into squares.

                Serve: Drizzle with caramel sauce and optionally add whipped cream before serving.
