1 cup granulated sugar (for caramel)

1/4 cup water (for caramel)

1 cup whole milk

4 large eggs

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, melted

Instructions
 

Make the Caramel: In a small saucepan, combine the granulated sugar and water. Heat over medium heat, swirling (not stirring) until the sugar dissolves and the mixture turns a deep amber color (about 10 minutes). Carefully pour about 1 tablespoon of caramel into the bottom of each muffin cup in a greased muffin tin. Tilt the tin to coat the bottoms evenly. Let it cool and harden.

    Prepare the Flan Batter: In a large mixing bowl, whisk together the eggs, whole milk, sweetened condensed milk, and vanilla extract until smooth.

      Combine Dry Ingredients: In a separate bowl, mix the all-purpose flour, baking powder, and salt.

        Incorporate All Ingredients: Gradually add the dry ingredients to the flan mixture, mixing until just combined. Fold in the melted butter, being careful not to overmix.

          Pour the Batter: Carefully pour the flan batter on top of the hardened caramel in each muffin cup, filling them about 3/4 full.

            Bake: Preheat the oven to 350°F (175°C). Place the muffin tin in a larger baking dish filled with hot water (this is a water bath to help steam the muffins). Bake for 25-30 minutes or until a toothpick comes out clean from the center.

              Cool and Unmold: Once done, carefully remove the muffin tin from the water bath and allow it to cool on a wire rack for about 10 minutes. Gently run a knife around the edges of each muffin and invert them onto a serving platter to release the caramel flan muffins.

                Serve: Enjoy warm or chilled, allowing the caramel to drizzle down the sides of the muffins.
