Ingredients

12 oz spaghetti or your choice of pasta

3 large yellow onions, thinly sliced

4 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon red pepper flakes (adjust for spice level)

Salt and black pepper to taste

1 cup vegetable broth

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh parsley, chopped (for garnish)

Instructions

Caramelize the Onions: In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-low heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 30-35 minutes until the onions are deeply caramelized and golden brown.

Add Flavors: When the onions are caramelized, add the minced garlic, thyme, and red pepper flakes. Cook for an additional 2-3 minutes until the garlic is fragrant.

Create the Sauce: Pour in the vegetable broth and let it simmer for about 5 minutes to meld the flavors. Season with salt and black pepper to taste.

Cook the Pasta: Meanwhile, cook your pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Combine Everything: Add the drained pasta to the caramelized onion mixture. Toss well to coat the pasta in the sauce. If the mixture seems dry, add a bit of the reserved pasta water until the desired consistency is achieved.

Finish with Cheese: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.

Serve: Divide the pasta among serving plates, and garnish with chopped fresh parsley and an extra sprinkle of Parmesan cheese.

                Prep Time: 10 min | Total Time: 50 min | Servings: 4

                  - Presentation Tips: Plate the pasta in shallow bowls, twirling it elegantly with a fork for a professional look. Top with a sprig of fresh thyme and a drizzle of high-quality olive oil for added elegance.
