2 lbs beef chuck, cut into 2-inch cubes

2 tablespoons vegetable oil

1 large onion, chopped

4 cloves garlic, minced

2 bell peppers (red and green), chopped

1 cup diced tomatoes (canned or fresh)

2 cups beef broth

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 bay leaf

2 medium carrots, sliced

1 cup potatoes, diced

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sear the Beef: In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the pot in batches. Sear the beef on all sides until browned, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables: In the same pot, add the chopped onion, garlic, and bell peppers. Cook until the onions are translucent and the peppers soften, about 4-5 minutes.

      Add Tomato and Spices: Stir in the diced tomatoes, ground cumin, smoked paprika, and dried oregano. Cook for another 2-3 minutes until fragrant.

        Combine Ingredients: Return the seared beef to the pot, and add the beef broth, bay leaf, sliced carrots, and diced potatoes. Stir everything together, ensuring the beef is submerged in the liquid.

          Begin Braising: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 2 hours, or until the beef is tender and the flavors have melded together.

            Final Adjustments: Check the seasoning and adjust with salt and pepper as needed. If the sauce is too thin, remove the lid and let it simmer for an additional 10-15 minutes to thicken.

              Serve: Serve the carne guisada hot, garnished with fresh chopped cilantro. It pairs beautifully with rice or warm tortillas.
