4 large carrots, grated

1 cup pomegranate seeds

½ cup pistachios, chopped

¼ cup fresh mint leaves, finely chopped

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon lemon juice

Salt and pepper to taste

Optional: ¼ cup feta cheese, crumbled

Instructions
 

In a large mixing bowl, combine the grated carrots and pomegranate seeds, mixing them gently.
