1 large head of cauliflower, grated into rice-sized pieces

2 tablespoons sesame oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, and corn)

2 eggs, lightly beaten

3 green onions, chopped

3 tablespoons soy sauce (or tamari for a gluten-free option)

Salt and pepper to taste

Optional: 1 teaspoon grated ginger for extra flavor

Instructions
 

Begin by grating the cauliflower into rice-sized pieces using a food processor or a box grater. Set aside.

    Heat sesame oil in a large skillet or wok over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add minced garlic and grated ginger (if using) to the skillet and cook for an additional 1 minute, just until fragrant.

        Stir in the mixed vegetables and cook for about 3-5 minutes until they are heated through.

          Push the vegetable mixture to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked and then mix them into the vegetable mixture.

            Add the grated cauliflower and soy sauce to the skillet. Stir everything together and cook for another 5-7 minutes, until the cauliflower is tender but still retaining some of its crunch.

              Season with salt and pepper to taste, and stir in the chopped green onions just before serving.
