Ingredients
  

1 sheet puff pastry, thawed

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup feta cheese, crumbled

½ cup mozzarella cheese, shredded

1 clove garlic, minced

1 small onion, finely chopped

1 tablespoon olive oil

Salt and pepper to taste

1 egg, beaten (for egg wash)

1 teaspoon lemon juice

1 teaspoon dried oregano (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.

      Add Spinach: Increase the heat slightly and add the spinach to the skillet, cooking until wilted (around 2-3 minutes). Remove from heat and let it cool slightly.

        Mix the Filling: In a mixing bowl, combine the ricotta cheese, feta cheese, mozzarella cheese, sautéed spinach and onion mixture, lemon juice, and oregano (if using). Season with salt and pepper to taste. Mix until well combined.

          Prepare the Pastry: Roll the puff pastry sheet on a lightly floured surface to smooth it out. Cut it into equal squares (about 4x4 inches).

            Fill the Pockets: Place a generous tablespoon of the filling in the center of each puff pastry square. Be careful not to overfill.

              Seal the Pastries: Fold each square diagonally to create a triangle and seal the edges by pressing with a fork or your fingers. Make sure the filling is encased securely.

                Egg Wash: Brush the top of each pastry with the beaten egg to give them a golden color when baked.

                  Bake: Place the filled pastries on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.

                    Cool and Serve: Remove from the oven and allow to cool for a few minutes before serving. Enjoy warm as an appetizer or a delightful snack!
