300g pasta (penne or fusilli work well)

500g cherry tomatoes, halved

200g mozzarella cheese, cubed

100g grated Parmesan cheese

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (or ½ teaspoon dried basil)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 200°C (390°F).

    In a large mixing bowl, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper. Toss to coat the tomatoes evenly in the seasoning.

      Spread the seasoned tomatoes on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, until they are soft and slightly caramelized.

        While the tomatoes roast, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

          In a large mixing bowl, combine the cooked pasta with the roasted tomatoes, cubed mozzarella, grated Parmesan, and fresh basil. Mix well.

            If the mixture is too dry, gradually add the reserved pasta water until you reach your desired consistency. The cheese should start to melt and create a creamy texture.

              Taste and adjust seasoning with more salt, pepper, or herbs as desired.

                Serve hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan if you like.
