1 lb fresh strawberries (large and firm)

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 tsp lemon zest

1/2 cup graham cracker crumbs

Whipped cream (for garnish, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Strawberries: Rinse and dry the strawberries. Cut off the tops and hollow out the centers using a small paring knife or a strawberry corer. Be careful not to pierce the bottom of the strawberries.

    Make the Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon zest. Use an electric mixer to mix until smooth and creamy.
