Cheesesteak Tortellini in Rich Provolone Sauce

1 package (9 ounces) cheese tortellini

1 tablespoon olive oil

1 small onion, finely chopped

1 red bell pepper, diced

1 green bell pepper, diced

8 ounces ribeye steak, thinly sliced

2 clove garlic, minced

1 cup beef broth

1 cup heavy cream

1 cup provolone cheese, shredded

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 2-3 minutes until translucent.

      Add the Peppers: Stir in the diced red and green bell peppers, cooking for an additional 3-4 minutes until they start to soften.

        Cook the Steak: Push the vegetables to one side of the skillet and add the sliced ribeye steak. Season with salt and pepper. Cook for 3-4 minutes until browned, stirring occasionally.

          Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant.

            Create the Sauce: Pour in the beef broth and bring to a simmer. Let it reduce slightly for about 3 minutes. Then, lower the heat and stir in the heavy cream.

              Melt the Cheese: Gradually add the shredded provolone cheese to the skillet, stirring continuously until melted and creamy. If the sauce is too thick, add a splash more of beef broth or water to achieve desired consistency.

                Combine Tortellini and Sauce: Gently fold the cooked tortellini into the skillet, making sure each piece is well coated with the rich provolone sauce. Allow it to heat through for an additional 2-3 minutes.
