Ingredients

2 large onions (preferably sweet onions)

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon (about 8-10 slices)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 large eggs

1 cup breadcrumbs (panko recommended for extra crunch)

Oil for frying (vegetable or canola)

Instructions

Prepare the Onions: Peel the onions and slice them into 1/2-inch thick rings. Carefully separate the rings, keeping the larger ones intact for stuffing.

Make the Cheese-Bacon Filling: In a medium bowl, combine the shredded cheddar cheese and crumbled bacon. Mix well until combined.

Stuff the Onion Rings: Take a larger onion ring and fill it generously with the cheese and bacon mixture. Place a smaller onion ring on top to create a sandwich. Repeat this step until all onion rings are filled.

Set Up Breading Station: In one bowl, whisk the flour, paprika, garlic powder, onion powder, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Bread the Onion Rings: Dip each stuffed onion ring first into the flour mixture, making sure to coat evenly. Next, dip it into the egg mixture, letting the excess drip off, and finally coat it in breadcrumbs, pressing gently to adhere.

Heat the Oil: In a large skillet or deep fryer, heat at least 1 inch of oil over medium heat until it reaches 350°F (175°C).

Fry the Onion Rings: Carefully place the breaded onion rings in the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

Drain and Serve: Remove the onion rings from the oil and place them on a plate lined with paper towels to absorb excess oil. Let them cool slightly before serving.

Enjoy: Serve your delicious Cheesy Bacon Onion Rings warm with your favorite dipping sauce (like ranch or spicy mayo)!
