Ingredients

8 oz bowtie pasta

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (14 oz) diced tomatoes with herbs

1 cup beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Start by cooking the bowtie pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess grease.

Stir in the diced tomatoes (with their juices) and beef broth, mixing well. Sprinkle in the Italian seasoning, along with salt and pepper to taste. Bring the mixture to a gentle simmer.

Reduce heat to low and add the cooked bowtie pasta to the skillet, stirring to combine. Slowly fold in the shredded cheddar and mozzarella until melted and creamy.

Allow the mixture to cook on low for an additional 2-3 minutes to heat through and meld all flavors together.

Serve hot, garnished with fresh chopped parsley for a pop of color.
