1 lb ground beef

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

1 cup salsa (for dipping)

Instructions
 

In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.

    Add minced garlic, smoked paprika, onion powder, salt, and pepper to the beef. Stir for 1-2 minutes until fragrant.

      Remove the skillet from heat and let the mixture cool slightly.

        In a bowl, combine the cooked beef, cream cheese, shredded cheddar cheese, and chopped green onions. Mix until well combined.

          Lay a tortilla flat on a clean surface. Spoon a generous amount of the beef and cheese mixture onto the center of the tortilla, spreading it out in a line.

            Fold the sides of the tortilla inward, then roll it from the bottom up to create a tight roll.

              Repeat for the remaining tortillas and filling.

                Preheat a non-stick skillet over medium heat. Place the roll-ups seam side down on the skillet. Cook for 2-3 minutes per side or until golden and crispy.

                  Remove from the skillet and slice each roll-up into bite-size pieces. Serve warm with salsa for dipping.
