4 cups fresh broccoli florets

1 cup uncooked brown rice

2 cups vegetable broth

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (or homemade)

1/2 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs

2 tablespoons olive oil

1 tablespoon Dijon mustard

1/2 cup grated Parmesan cheese

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

    In a medium saucepan, combine the uncooked brown rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 30-35 minutes or until the rice is tender.

      While the rice cooks, steam the broccoli florets in a steamer basket for about 5-7 minutes until just tender and bright green. Set aside.

        In a large mixing bowl, combine the cooked rice, steamed broccoli, cheddar cheese, cream of mushroom soup, sour cream, garlic powder, onion powder, Dijon mustard, salt, and pepper. Mix until well combined.
