1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup milk

1 large egg

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup diced bell peppers (any color)

1 cup diced zucchini

1 cup frozen corn

1 tsp dried Italian herbs (oregano, basil)

1 tsp salt

1/2 tsp black pepper

1/2 cup ketchup (for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, shredded cheddar cheese, milk, egg, chopped onion, minced garlic, dried herbs, salt, and black pepper. Mix until well incorporated.

      Add Vegetables: Gently fold in the diced bell peppers, zucchini, and frozen corn into the meat mixture until evenly distributed.

        Shape and Layout: Transfer the mixture to the greased casserole dish and shape it into a loaf. Press firmly but gently to ensure it holds its shape while cooking.

          Top with Ketchup: Spread the ketchup evenly over the top of the meatloaf for added flavor and moisture.

            Bake: Place the casserole dish in the preheated oven and bake for 45-60 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F or 71°C).

              Add Extra Cheese: In the last 10 minutes of baking, sprinkle additional shredded cheddar cheese over the top of the meatloaf and return to the oven until the cheese is melted and bubbly.

                Serve: Once done, remove the casserole from the oven and let it rest for 10 minutes. Slice into portions and garnish with fresh parsley, if desired.
