2 medium-sized potatoes, peeled and diced

4 large eggs

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1 small onion, finely chopped

1 bell pepper (any color), diced

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

Fresh parsley or chives, chopped (for garnish)

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally until the potatoes are golden brown and tender.

    Sauté the Vegetables: Add the chopped onion and bell pepper to the skillet with the potatoes. Sauté for another 5-7 minutes until the vegetables are softened.

      Whisk the Eggs: In a separate bowl, crack the eggs and whisk them together with garlic powder, a pinch of salt, and pepper until well combined.

        Combine and Cook: Pour the egg mixture over the potato and vegetable mixture in the skillet. Stir gently to combine, allowing the eggs to scramble and cook for about 3-4 minutes until just set.
