1 pound ground beef

8 ounces rotini pasta

1 can (10 oz) Rotel diced tomatoes with green chilies

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Then, add the ground beef to the skillet, cooking until browned and fully cooked, breaking it apart with a spatula.

      Add Spices: Stir in chili powder, cumin, paprika, and black pepper. Cook for an additional 1-2 minutes until the spices are fragrant. Season with salt to taste.

        Incorporate Rotel: Pour in the can of Rotel tomatoes (with juices), mixing well with the beef and onion mixture. Let it simmer for about 5 minutes to allow the flavors to meld.

          Combine with Cream Cheese: Reduce the heat to low and add the softened cream cheese to the skillet, stirring until it is completely melted and creamy.
