1 pound breakfast sausage (Italian or spicy)

1 dozen large eggs

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

3 cups cubed day-old bread (preferably sourdough or whole grain)

1 cup diced bell peppers (mix of red and green for color)

1/2 cup chopped onions

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley or chives for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease a large baking dish (approx. 9x13 inches) with cooking spray or butter.

    In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula. Drain any excess grease and set aside.

      In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and black pepper until well combined.

        Add the cooked sausage, diced bell peppers, chopped onions, and both types of cheese to the egg mixture. Stir until everything is evenly incorporated.

          Fold in the cubed bread, making sure all pieces are moistened with the egg mixture.

            Pour the mixture into the prepared baking dish and spread it evenly.

              Bake in the preheated oven for 45-50 minutes, or until the casserole is set and slightly golden on top. A toothpick inserted in the center should come out clean.

                Remove from the oven and let it rest for 10 minutes before serving. Garnish with fresh parsley or chives for a pop of color.
