4 large russet potatoes, thinly sliced

2 cups cooked ham, diced

2 cups shredded sharp cheddar cheese

1 cup heavy cream

1 cup milk

1 small onion, finely chopped

3 cloves garlic, minced

4 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium saucepan over medium heat, melt the butter. Add the chopped onion and cooked garlic; sauté until the onion is soft and translucent, about 3–4 minutes.

      Sprinkle the flour over the onion mixture and stir continuously for 1-2 minutes to create a roux.

        Slowly pour in the heavy cream and milk, whisking constantly until the mixture thickens and is smooth, about 5 minutes.

          Stir in the dried thyme, smoked paprika, salt, and pepper. Once combined, remove from heat.

            In a greased 9x13 inch baking dish, layer half of the sliced potatoes. Spread half of the diced ham over the potatoes and top with half of the cheese.

              Pour half of the creamy mixture over the first layer.

                Repeat the layers with the remaining potatoes, ham, cheese, and cream mixture, ensuring an even distribution.

                  Cover the baking dish with foil and bake in the preheated oven for 45 minutes.

                    Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the top is golden and bubbly.

                      Remove from the oven and let sit for 5–10 minutes before slicing.

                        Garnish with fresh parsley before serving.
