Ingredients

2 cups fresh cherries, pitted and halved

4 cups cold water

1/4 cup fresh lime juice (about 2 limes)

1/4 cup agave syrup (or honey)

Fresh mint leaves for garnish

Ice cubes

Instructions

In a blender, combine the pitted and halved cherries with 1 cup of cold water. Blend until smooth, about 30 seconds.

Strain the blended cherry mixture through a fine mesh sieve into a pitcher, using a spatula to press out as much juice as possible. Discard the solids.

Add the remaining 3 cups of cold water, fresh lime juice, and agave syrup to the pitcher. Stir well to combine and dissolve the syrup.

Taste the agua fresca and adjust sweetness with additional agave syrup if desired.

Chill the cherry agua fresca in the refrigerator for at least 30 minutes before serving.

Serve over ice in tall glasses, and garnish with fresh mint leaves for an added touch of freshness.
