Chicken and Broccoli Pasta

2 cups pasta (fettuccine or penne)

2 chicken breasts, diced

3 cups broccoli florets

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Begin by cooking the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the diced chicken and sprinkle with salt, pepper, and Italian seasoning. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.

        Add the broccoli florets to the skillet with the garlic, stirring regularly. Cook for 3-4 minutes until the broccoli is tender but still bright green.

          Reduce the heat to low and pour in the heavy cream. Stir well, then add the grated Parmesan cheese gradually, stirring until the cheese melts and the sauce thickens. If the sauce is too thick, add reserved pasta water until the desired consistency is reached.

            Return the cooked chicken and pasta to the skillet. Toss everything together until evenly coated with the creamy sauce. Adjust seasoning with salt and pepper if necessary.

              Remove from heat and let it sit for a minute.

                Serve hot, garnished with chopped fresh parsley on top.
