Ingredients

2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (carrots, peas, corn)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

1 cup milk

2 cups biscuit mix

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, salt, and pepper. Stir until all ingredients are well incorporated.

Pour the chicken mixture into a greased 9x13 inch casserole dish and spread it evenly.

In a separate bowl, whisk together the biscuit mix and milk until just combined; it should be slightly lumpy.

Drop spoonfuls of the biscuit mixture evenly over the chicken layer in the casserole dish. Do not spread it out; this will create a dumpling-like texture as it bakes.

Place the casserole in the preheated oven and bake for 30-35 minutes, or until the biscuit topping is golden brown and fluffy.

Remove from the oven and let cool for a few minutes. Sprinkle fresh parsley on top for garnish before serving.
