2 cups cooked chicken, shredded

1 cup mushrooms, sliced (button or cremini)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

1 package (1 lb) puff pastry (thawed if frozen)

1 egg (beaten, for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large skillet over medium heat, add the olive oil and butter. Once hot, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onions become translucent.

    Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for another 5-7 minutes, stirring occasionally until the mushrooms are golden brown and any liquid has evaporated.

      Prepare the Chicken Filling: Stir in the shredded chicken, mustard, thyme, salt, and pepper. Pour in the heavy cream and stir well. Cook for an additional 3-4 minutes until everything is heated through. Remove from the heat and let it cool slightly.

        Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry to fit your desired baking dish. You can cut it into squares or circles, depending on your preference.

          Assemble the Pastries: Place a spoonful of the chicken and mushroom mixture in the center of each pastry cutout. Fold the pastry over to create a pocket (or a turnover). Press the edges with a fork to seal completely.
