Ingredients
  

2 cups cooked chicken, shredded

4 cups diced tomatoes (preferably Roma)

1 cup mozzarella cheese, shredded

1/2 cup fresh basil, chopped

1/2 cup balsamic vinegar

1/4 cup olive oil

3 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1 French baguette, sliced into 1-inch pieces

1/4 cup grated Parmesan cheese

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the diced tomatoes, shredded chicken, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, black pepper, and Italian seasoning. Mix well until all the ingredients are evenly incorporated.

      In a 9x13 inch baking dish, spread half of the chicken and tomato mixture evenly across the bottom.

        Layer half of the baguette slices over the mixture, ensuring they are more or less evenly distributed.

          Sprinkle half of the mozzarella cheese over the baguette layer.

            Add the rest of the chicken and tomato mixture on top. Then, layer the remaining baguette slices and top with the remaining mozzarella cheese.

              Lastly, sprinkle Parmesan cheese over the entire casserole to add an extra flavor punch.

                Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                    Once done, let the casserole cool for a few minutes, then garnish with extra fresh basil if desired before serving.
