Ingredients

4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1/2 cup chicken broth

1/4 cup lime juice (freshly squeezed)

1/4 cup chopped fresh cilantro for garnish

Lime wedges for serving

Instructions

Marinate the Chicken: In a large bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix well. Add the chicken thighs and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken thighs to the skillet, cooking for about 5-7 minutes on each side until they are golden brown and cooked through. Ensure they reach an internal temperature of 165°F (75°C).

Make the Sauce: Once the chicken is cooked, remove them from the skillet and set aside. In the same skillet, pour in the chicken broth and lime juice. Scrape up any brown bits from the bottom of the pan to enhance the flavor. Let the sauce simmer for about 2-3 minutes to slightly reduce.

Combine & Serve: Return the chicken to the skillet, spooning the sauce over the top. Let it heat for an additional minute or two. Slice the chicken into strips, arrange on a plate, and drizzle with the remaining sauce.

Garnish & Enjoy: Top with fresh cilantro and serve with lime wedges on the side for an extra zesty kick.
