Ingredients
  

For the Chicken:

1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons soy sauce

1 teaspoon cornstarch

1 tablespoon vegetable oil (for frying)

For the Chow Mein:

8 oz (225g) chow mein noodles (fresh or dried)

1 tablespoon sesame oil

1 cup shredded cabbage

1 cup sliced bell peppers (mix of colors)

1 cup bean sprouts

1/2 cup green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

For The Best Chow Mein Sauce:

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sugar

1 teaspoon sesame oil

1/2 cup chicken broth

Instructions
 

Marinate the Chicken: In a medium bowl, mix the sliced chicken with 2 tablespoons of soy sauce and 1 teaspoon of cornstarch. Stir well and let it marinate for at least 15 minutes.

    Cook the Noodles: If using dried chow mein noodles, cook them according to the package instructions. If using fresh noodles, you can skip this step and add them directly to the pan later. Drain and set aside.

      Prepare the Sauce: In a small bowl, whisk together all the sauce ingredients: soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, sesame oil, and chicken broth. Set aside.

        Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until fully cooked and browned. Remove from the skillet and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the sesame oil. Sauté garlic and ginger for about 30 seconds until fragrant. Then, add the cabbage, bell peppers, and bean sprouts. Stir-fry for approximately 3-4 minutes until the vegetables are tender-crisp.

            Combine Everything: Add the cooked chicken back to the skillet, followed by the cooked chow mein noodles. Pour the chow mein sauce over the mixture. Toss everything together to combine, cooking for an additional 2-3 minutes until heated through and well coated with the sauce.
