Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup ham, diced

6 cups chicken broth

2 cups potatoes, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon black pepper

1 cup heavy cream

1 cup Gruyère cheese, shredded

1 cup Swiss cheese, shredded

Fresh parsley, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 5 minutes.

    Stir in the shredded chicken and diced ham, cooking for an additional 3-4 minutes to warm through.

      Pour in the chicken broth and add the diced potatoes, thyme, parsley, and black pepper. Bring to a boil, then reduce to a simmer. Cover and let it cook for about 15 minutes or until the potatoes are tender.

        Once the potatoes are cooked, reduce the heat to low and stir in the heavy cream.

          Gradually add both the Gruyère and Swiss cheese, stirring until fully melted and the soup is creamy. Adjust seasoning if necessary.
