Ingredients

8 oz egg noodles

1 lb boneless, skinless chicken thighs, thinly sliced

2 tablespoons vegetable oil

2 cloves garlic, minced

1 bell pepper (red or green), sliced

1 cup snap peas, trimmed

2 carrots, julienned

3 green onions, chopped

4 tablespoons soy sauce

2 tablespoons oyster sauce (or mushroom sauce for a vegetarian option)

1 tablespoon sesame oil

1 teaspoon freshly grated ginger

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

Instructions

Cook the Noodles: Bring a large pot of salted water to a boil, add the egg noodles, and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken thighs, season with salt and pepper, and stir-fry for 5-6 minutes until the chicken is cooked through and slightly golden. Remove from the pan and set aside.

Sauté the Vegetables: In the same pan, add more oil if needed. Add the garlic and ginger, stir-frying for about 30 seconds until fragrant. Toss in the bell pepper, snap peas, and carrots. Stir-fry for another 4-5 minutes until the vegetables are just tender but still crisp.

Combine and Stir-Fry: Add the cooked chicken back into the pan with the vegetables. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together to coat well and heat through, about 2 minutes.

Add Noodles: Toss in the cooked egg noodles and mix until they are evenly combined with the chicken and vegetables. Cook for another 1-2 minutes, ensuring everything is heated through.

Final Touches: Remove from heat and stir in chopped green onions. Adjust seasoning with more soy sauce or salt if needed.

Serve and Garnish: Plate the Chicken Lo Mein, garnishing with sesame seeds for an added crunch.
