1 cup all-purpose flour, for dredging

4 tablespoons olive oil

8 ounces cremini mushrooms, sliced

2 cloves garlic, minced

1 cup chicken broth

2 tablespoons balsamic vinegar

1 tablespoon honey

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Dredge each chicken breast in flour, shaking off the excess.

    Sear the Chicken: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Mushrooms: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced mushrooms and cook for about 5 minutes until they are browned and tender. Add the minced garlic and cook for another minute until fragrant.

        Add the Sauce Ingredients: Pour in the chicken broth, balsamic vinegar, honey, and add dried thyme. Stir well, scraping up any brown bits from the bottom of the pan.

          Combine and Simmer: Return the chicken breasts to the skillet, nestling them in the mushroom sauce. Cover and let simmer for about 5-7 minutes to allow the flavors to meld and the chicken to reheat.

            Serve and Garnish: Remove from heat. Plate the chicken and generously spoon the mushroom sauce over the top. Garnish with freshly chopped parsley.
