4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

8 ounces cremini or shiitake mushrooms, sliced

2 cloves garlic, minced

1 cup low-sodium chicken broth

2 tablespoons balsamic vinegar

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Start by placing the chicken breasts between two sheets of plastic wrap. Pound them to an even thickness of about 1/2 inch for uniform cooking.

    Season and Dredge: In a shallow dish, mix flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off excess.

      Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for about 4-5 minutes on each side, or until golden brown. Remove chicken from skillet and set aside.

        Sauté the Mushrooms: In the same skillet, add butter and sliced mushrooms. Cook until mushrooms are browned and tender, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.

          Make the Sauce: Pour in chicken broth and balsamic vinegar, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let the sauce reduce slightly for about 3-4 minutes.

            Combine: Return the chicken to the skillet and spoon sauce over the top. Cover and cook for an additional 5 minutes, allowing the chicken to heat through.

              Serve: Plate each chicken breast, spooning mushrooms and sauce over the top. Garnish with chopped parsley for a fresh touch.
