Chicken Meatballs with Piccata Sauce

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/4 cup chopped fresh parsley

1 egg, lightly beaten

1 tsp salt

1 tbsp olive oil

2 tbsp unsalted butter

2 cloves garlic, minced

1/2 cup white wine (or chicken broth)

Juice of 1 lemon

1/4 cup capers, drained

1/2 cup chicken broth

Salt and pepper to taste

Fresh parsley for garnish

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, egg, salt, pepper, and onion powder. Mix until well combined, but do not overmix.

      Form the Meatballs: Using your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet, spaced about an inch apart.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 20 minutes, or until they are cooked through and golden brown.
