Ingredients

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

1 package of store-bought puff pastry (2 sheets)

1 cup marinara sauce

Fresh basil leaves for garnish

Olive oil for brushing

Salt and pepper to taste

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare Filling: In a large bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, grated Parmesan cheese, and the beaten egg. Add the garlic powder, dried oregano, crushed red pepper flakes, and season with salt and pepper. Mix everything until well combined.

Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry and cut into squares (about 4x4 inches). You will need a total of 8 squares for 4 pillows.

Fill the Pastry: Place a generous tablespoon of the chicken filling in the center of each pastry square. Fold the corners of the square over the filling to create a pillow shape, and press to seal the edges.

Brush with Olive Oil: Place the pillows on the prepared baking sheet. Brush the tops with olive oil to give them a golden color while baking.

Bake: Bake in the preheated oven for about 20-25 minutes or until the pastry is golden brown and crispy.

Serve with Marinara: While the pillows are baking, warm the marinara sauce in a saucepan over low heat.

Plate and Garnish: Once the pillows are ready, remove them from the oven, and serve them hot drizzled with marinara sauce. Garnish with fresh basil leaves.
