2 cups cooked chicken, shredded

1/2 cup basil pesto (store-bought or homemade)

1 cup baby spinach

1/2 cup roasted red peppers, sliced

1/4 cup grated Parmesan cheese

4 large tortillas (spinach or whole wheat)

1/4 cup sun-dried tomatoes, chopped

1/2 cup cream cheese, softened

Salt and pepper, to taste

Optional: pine nuts for garnish

Prepare the Chicken: In a large mixing bowl, combine the shredded chicken with basil pesto. Mix well until the chicken is fully coated in the pesto all over. Season with salt and pepper to taste.

    Spread the Cream Cheese: Lay out each tortilla on a flat surface. Spread a generous layer of softened cream cheese over each tortilla, leaving a small border around the edges.

      Layer the Ingredients: On each tortilla, add a handful of baby spinach, followed by a portion of the pesto chicken mixture, sliced roasted red peppers, chopped sun-dried tomatoes, and a sprinkle of Parmesan cheese.

        Wrap it Up: Starting from one edge, carefully roll up the tortilla tightly around the filling. You can tuck in the sides as you go to keep the filling from spilling out. Repeat with the remaining tortillas.
