1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian-style)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 egg

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

Zest of 1 lemon

2 tablespoons olive oil (for frying)

1 cup chicken broth

1/4 cup fresh lemon juice

2 tablespoons capers

Additional parsley for garnish

Instructions
 

In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, salt, pepper, oregano, and lemon zest. Mix until well combined.

    Roll the mixture into meatballs about 1 inch in diameter and set aside.

      Heat olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches, being careful not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides. Remove and set on a plate.

        In the same skillet, add the chicken broth, lemon juice, and capers, scraping up any browned bits from the bottom of the pan. Bring to a simmer.

          Return the meatballs to the skillet. Cover and simmer in the sauce for another 10 minutes, allowing the flavors to meld and the meatballs to cook through.

            Serve the meatballs warm, garnished with fresh parsley and additional capers if desired. Enjoy over pasta, rice, or as a savory appetizer!
