2 cups cooked jasmine rice

1 lb boneless, skinless chicken breasts, cubed

1 cup broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

½ cup breadcrumbs (optional for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Chicken: In a large skillet, heat olive oil over medium heat. Add the cubed chicken breasts and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.

      Combine Ingredients: In a large bowl, combine the cooked jasmine rice, broccoli florets, cream of chicken soup, chicken broth, and half of the shredded cheddar cheese. Stir in the cooked chicken until well mixed.

        Transfer to Baking Dish: Grease a 9x13-inch baking dish with cooking spray or a bit of olive oil. Pour the chicken and rice mixture into the dish, spreading it evenly.

          Add Toppings: Sprinkle the remaining cheddar cheese on top. If you prefer a crunchy topping, add breadcrumbs over the cheese.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
