1 whole chicken (about 3-4 lbs), cut into pieces

8 cups low-sodium chicken broth

2 cups water

3 medium carrots, sliced

3 stalks celery, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

1 cup frozen peas

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing for about 3-4 minutes until the onions become translucent.

    Add the chicken pieces to the pot, browning them on all sides for about 5-7 minutes. This step adds depth to the soup’s flavor.

      Pour in the chicken broth and water, bringing the mixture to a boil. Once boiling, skim any foam that forms on the surface.

        Add the sliced carrots, celery, thyme, rosemary, and bay leaves. Season with salt and black pepper.

          Reduce the heat to low, cover the pot, and let it simmer for about 1 hour, or until the chicken is fully cooked and tender.

            Carefully remove the chicken pieces from the pot. Allow them to cool slightly, then shred the meat, discarding the skin and bones.

              Return the shredded chicken to the pot along with the frozen peas. Simmer for an additional 5-10 minutes to heat the peas through.

                Adjust seasoning if necessary and remove the bay leaves.

                  Serve hot, garnished with freshly chopped parsley for an extra touch of flavor and color.
