1 lb (450g) boneless, skinless chicken breasts, sliced into strips

8 oz (225g) cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tablespoons all-purpose flour

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice (for serving)

Instructions
 

Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken strips, seasoning with salt and pepper. Cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

      Add the Mushrooms: Stir in the sliced mushrooms and cook for another 5-6 minutes, until they are tender and starting to brown.

        Create the Sauce: Sprinkle the flour over the mushroom mixture, stirring to combine. Gradually pour in the chicken broth while continuously stirring to avoid lumps. Bring the mixture to a simmer.

          Incorporate the Cream: Once the sauce thickens slightly (about 2-3 minutes), reduce the heat to low and stir in the sour cream, Dijon mustard, and paprika. Mix until smooth and heated through.

            Combine Chicken and Sauce: Return the cooked chicken to the skillet, stirring to coat it well with the sauce. Cook for an additional 2-3 minutes to heat everything through. Adjust seasoning with salt and pepper as needed.

              Serve: Serve the chicken stroganoff over cooked egg noodles or rice for a hearty meal.
