Ingredients
  

2 cups cooked shredded chicken

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup cream cheese, softened

1/4 cup chopped fresh cilantro

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

12 small corn tortillas

Oil for frying

Salsa and sour cream for serving

Instructions
 

In a large mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, cilantro, garlic powder, onion powder, cumin, salt, and pepper. Mix until well incorporated.

    Heat a small skillet over medium heat and lightly warm the corn tortillas in it for about 10-15 seconds on each side until pliable. This will prevent them from cracking when you roll them.

      Place about 2-3 tablespoons of the chicken mixture at one end of a tortilla. Roll it tightly and securely, tucking in the sides as you roll.

        Continue this process until all fillings are used or tortillas are rolled.

          In a deep skillet or frying pan, heat oil over medium-high heat. You want enough oil to submerge the taquitos halfway.

            Once the oil is hot, gently place 3-4 taquitos in the oil, seam side down, and fry for about 3-4 minutes or until golden brown and crispy.

              Using tongs, flip the taquitos halfway to ensure even cooking. Remove them and drain on paper towels.

                Serve your crispy chicken taquitos warm with salsa and sour cream on the side for dipping. Enjoy!
