Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    After draining and rinsing the chickpeas, pat them dry with a clean kitchen towel to remove excess moisture.

      In a large mixing bowl, combine the olive oil, smoked paprika, garlic powder, ground cumin, salt, black pepper, and cayenne pepper (if using).

        Add the chickpeas to the bowl and toss well to coat them evenly with the spice mixture.

          Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.

            Roast in the preheated oven for 20-25 minutes, shaking the pan halfway through to ensure even cooking, until they are golden brown and crunchy.

              If using, sprinkle the nutritional yeast over the chickpeas while they are still warm and toss to combine.

                Remove from the oven and allow to cool slightly. Garnish with fresh chopped parsley before serving.
