Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 cup ditalini pasta

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup celery, diced

1 bell pepper (red or yellow), diced

1 zucchini, diced

1 can (14 oz) diced tomatoes (with juices)

4 cups vegetable broth

1 tsp dried oregano

1 tsp dried basil

1/2 tsp crushed red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Juice of 1 lemon

Fresh parsley or cilantro, for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic, diced carrots, celery, and bell pepper. Cook for another 5-6 minutes, or until the vegetables start to soften.

      Add the diced zucchini and cook for an additional 3 minutes, stirring occasionally.

        Pour in the canned tomatoes (with juices), vegetable broth, chickpeas, oregano, basil, and red pepper flakes (if using). Stir to combine and bring the mixture to a boil.

          Once boiling, reduce the heat to low and let it simmer for 15 minutes to allow the flavors to meld.

            In a separate pot, cook the ditalini pasta according to package instructions until al dente. Drain and set aside.

              After the soup has simmered, add the cooked ditalini to the pot and stir. Season with salt and pepper to taste.

                Remove the soup from heat, stir in the lemon juice, and let it rest for a few minutes before serving.

                  Serve hot, garnished with fresh parsley or cilantro.
