Chili Cheese Baked Potatoes

Ingredients
  

4 large russet potatoes

1 can (15 oz) chili (vegetarian or meat-based)

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

Salt and pepper to taste

Olive oil for rubbing

Optional toppings: jalapeños, diced tomatoes, avocado

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prep the Potatoes: Scrub the russet potatoes under cold running water, then dry them with a towel. Poke a few holes in each potato with a fork to allow steam to escape during baking.

      Coat Potatoes: Rub each potato with olive oil and sprinkle with salt. Place them on a baking sheet.

        Bake the Potatoes: Bake the potatoes in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork.

          Heat Chili: While the potatoes are baking, heat the chili in a saucepan over medium heat until warmed through. Stir in garlic powder, onion powder, cumin, salt, and pepper to taste.

            Prepare Toppings: As the potatoes bake, prepare your toppings: chop green onions, and if desired, slice jalapeños and dice tomatoes or avocados.

              Assemble the Potatoes: Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes. Slice each potato lengthwise, creating a pocket. Gently push the ends toward each other to fluff up the inside.

                Add Chili & Cheese: Spoon a generous amount of the heated chili into each potato. Top with shredded cheddar cheese.

                  Melt the Cheese: Return the loaded potatoes to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                    Garnish and Serve: Carefully remove the potatoes from the oven. Top each with a dollop of sour cream and ample green onions (and any other optional toppings of your choice).
