4 large russet potatoes

2 cups shredded cheddar cheese

1 cup chili (homemade or canned)

1/2 cup sour cream

1/4 cup sliced green onions

1 jalapeño, sliced (optional for heat)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro (for garnish)

Prep the Potatoes: Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes. Cut them into thick steak fries.

    Season the Fries: In a large bowl, toss the potato fries with olive oil, garlic powder, paprika, salt, and pepper until they are evenly coated.

      Bake the Fries: Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for about 30-35 minutes, flipping halfway through, until golden brown and crispy.

        Warm the Chili: While the fries are baking, heat the chili in a saucepan over medium heat until warm. If using canned chili, follow the instructions on the can for heating.

          Add Cheese: Once the fries are done, remove them from the oven, and sprinkle the shredded cheddar cheese generously over the top of the fries.
