4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper to taste

1 cup fresh pineapple, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, deseeded and minced (optional)

Zest of 1 lime

Marinate the Salmon: In a small bowl, mix together olive oil, lime juice, chili powder, garlic powder, salt, and pepper. Place the salmon fillets in a shallow dish and coat them with the marinade. Let them marinate for at least 20 minutes.
