2 medium potatoes, peeled and grated

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

2 ripe avocados

2 tablespoons chili oil (adjust to taste)

1 tablespoon lemon juice

Crushed red pepper flakes, for garnish

Fresh cilantro or parsley, for garnish

4 slices of your choice of bread (sourdough or whole grain works well)

Instructions
 

Begin by preparing the hash browns: Place the grated potatoes in a clean kitchen towel and wring out excess moisture.

    In a bowl, combine the grated potatoes, chopped onion, garlic powder, paprika, salt, and pepper. Mix until evenly combined.

      Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.

        Once the oil is hot, add the potato mixture, pressing it down to form a compact layer. Cook for about 5-7 minutes or until the bottom is golden brown and crispy.

          Flip the hash brown carefully using a spatula, adding another tablespoon of olive oil if necessary. Cook for an additional 5-7 minutes on the other side until golden and crispy. Once done, transfer to a plate and keep warm.

            In a separate bowl, mash the avocados with lemon juice, salt, and half of the chili oil. Adjust the heat by adding more chili oil to your liking.

              Toast the slices of bread until golden brown.

                To assemble, spread a generous amount of the spicy avocado mixture over each slice of toast.

                  Top with the crispy hash browns and drizzle additional chili oil on top.

                    Garnish with crushed red pepper flakes and fresh cilantro or parsley for a pop of color and flavor.
