Ingredients

8 oz cream cheese, cubed

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1 can (10 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, rinsed and drained

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (adjust to taste)

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish

Tortilla chips for serving

Instructions

In a medium pot over medium heat, add the cream cheese and allow it to melt slowly, stirring frequently until smooth and creamy.

Gradually add the shredded cheddar and pepper jack cheese, stirring continuously until all cheese is melted and combined.

Stir in the can of diced tomatoes with green chilies, black beans, red onion, minced jalapeño, garlic, cumin, chili powder, and season with salt and pepper.

Cook for another 5-7 minutes, stirring frequently to ensure it doesn't stick to the bottom, until everything is heated through and the dip is bubbling.

Once the dip is ready, remove it from heat and transfer to a serving bowl.

Garnish the top with fresh cilantro and serve warm with tortilla chips.
