250g linguine pasta

300g large prawns, peeled and deveined

4 cloves garlic, finely minced

1-2 red chillies, sliced (adjust to taste)

1 teaspoon red pepper flakes (optional, for extra heat)

3 tablespoons olive oil

½ cup cherry tomatoes, halved

1 tablespoon fresh lemon juice

Zest of 1 lemon

¼ cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sliced chillies. Sauté for about 1 minute until fragrant, but be careful not to burn the garlic.

      Cook the Prawns: Increase the heat to medium-high and add the prawns to the skillet. Season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes until the prawns turn pink and opaque.

        Add Tomatoes and Pasta: Toss in the cherry tomatoes and cook for another 2 minutes until softened. Add the drained pasta to the skillet, along with reserved pasta water, lemon juice, and lemon zest. Toss everything together until well combined and heated through.

          Garnish and Serve: Remove from heat and fold in chopped parsley. Taste and adjust seasoning if necessary. Serve immediately, topped with grated Parmesan cheese if desired.
