1 lb chicken thighs, boneless and skinless

2 tablespoons chipotle peppers in adobo sauce, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

Juice of 1 lime

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

In a medium bowl, mix the minced chipotle peppers, olive oil, smoked paprika, cumin, garlic powder, lime juice, salt, and pepper to create a marinade.

    Add the chicken thighs to the marinade, ensuring they're well coated. Let marinate for at least 30 minutes for optimal flavor (or up to 2 hours in the fridge).

      Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side, or until fully cooked and slightly charred (internal temperature should reach 165°F).

        Once cooked, remove the chicken from the heat and let it rest for a few minutes. Then, shred the chicken using two forks.
