1 pound large shrimp, peeled and deveined

2 tablespoons chipotle in adobo sauce, minced

2 tablespoons lime juice (freshly squeezed)

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup cooked quinoa or brown rice

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

Lime wedges for serving

In a medium bowl, combine the minced chipotle in adobo sauce, lime juice, olive oil, garlic powder, smoked paprika, salt, and pepper to create a marinade.

    Add the peeled and deveined shrimp to the marinade, toss to coat, and let it sit for about 15 minutes to absorb the flavors.

      While the shrimp marinates, prepare your base by cooking quinoa or brown rice according to package instructions. Set aside.

        Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until shrimp is pink and cooked through.
